Coconut Cashew Butter



This homemade coconut cashew butter is a delicious Paleo-friendly treat packed with healthy fats and nutty flavor. It's perfect for spreading on toast, dipping fruit, or enjoying straight from the spoon.

Ingredients:

  • 2 cups raw cashews
  • 1 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil
  • 1/2 teaspoon sea salt

Instructions:

Preheat oven to 350F 175C

Spread cashews and shredded coconut evenly on a baking sheet

Toast in the oven for 8-10 minutes, until lightly golden and fragrant

Transfer toasted cashews and coconut to a food processor

Add coconut oil and sea salt

Blend for 5-7 minutes, scraping down the sides as needed, until smooth and creamy

Transfer the coconut cashew butter to a jar or airtight container for storage
